Spread each side of steak with a thin coating of french mustard. Cook in butter in a shallow pan over high heat just to seal both sides, Remove from pan and set aside. Add mushrooms and shallots to pan and cook. Add red wine and reduce by half. Add steaks and finish cooking steaks. Add cream. Do not boil or sauce will curdle. ENTRECOTE AU POIVRE VERT 4 New York steak 4% cup dry sherry 1 Tablespoon Mango Chutney 2 Tablespoons green peppercorns crushed I Cup cream 1 clove garlic crushed and chopped Season steaks with salt and pepper. Cook in shallow pan with butter. When steaks are cooked remove and set aside and keep warm. Add sherry to the pan. Reduce and add Mango Chutney, peppercorns and cream. Return steaks to sauce and heat with out boiling. BANANA FLAMBE 4 bananas peeled Ys cup brown sugar 4 tablespoons butter % teaspoon allspice % cup fresh lime juice % cup dark rum Melt the butter in a heavy skillet. Add sugar and allspice to butter and stir well. Lay the bananas in the syrup. Heat gently to heat the bananas through. Sprinkle with lime juice . Pour over rum and ignite. Shake the skillet gently until the flame dies. Spoon sauce over the bananas and serve at once. CHARLOTTE ROYALE Line the bottom and sides of a pudding mould with slices of Jelly Roll. % an inch thick. Fill with bavarian cream. Turn out when set and decorate with whipped cream BAVARIAN CREAM 2 pints milk 8 eggs 80z sugar I pint cream, whipped 202 leaf gelatine soaked in cold water. Whisk egg yolks and sugar. Bring the milk to a boil and pour onto the egg yolk mixture stirring all the time. Re- turn to the stove and cook but do not boil. Continue cooking without boiling until the mixture coats the back of a wooden spoon. Add soaked gelatine and dissolve in the sauce. Strain and place on ice.
