HRH THE DUKE OF EDINBURGH’S FIFTH COMMONWEALTH STUDY CONFERENCE CANADA 1980 Come the spring of 1980, some 300 men and wo- men from commonwealth countries around the world will embark on a unique, three-week study tour in Canada. It is a conference ...... with a difference. It is HRH The Duke of Edinburgh’s fifth Com- monwealth Study Conference, a gathering that eschews formal agenda, makes no recommend- ations and issues no resolutions. The purpose of the conference is to select people in industry, trade unions and public administration from every part of the Commonwealth, who are like- ly to become leaders in the future and to expose them to the widest possible aspect of the human problems in industrial communities, and to en- courage them to compare and discusss their ideas and reactions. To get exposure and the experience, members will embark on a country-wide set of concurrent tours in study groups of 20. Some 60 Canadian com- munities, from British Columbia to Newfound- - land have been selected as study tour.sites. Cas- _ siar is one of the sixty. In the visits, emphasis will be placed. on social sit- uations typified in the workplace, in the home and in the community generally. The aim will be to achieve a high level of interaction with the cit- izens of each locality visited, to have opportun- ities to see and talk about the features of work and the ways of like in the various industrial com- munities making up the study tour. In Cassiar, a five member panel has been selected to co-ordinate the conference tour in Cassiar. Al- though the group will not: arrive in Cassiar until the latter part of May, a great deal of preparation is necessary. A proposed itinerary has been sub- mitted to and approved by the Conference Execu- tive. In the early part of the New Year, a member of the Conference Executive will visit Cassiar to go through a dry run of the tour. Although May - seems like a long way off, that amount of time will be required to set up a tour which we hope will be not only a unique experience for the visit- ors, but also the residents of Cassiar. It is the intention of the Cassiar Conference Panel to keep Cassiarites informed and in future issues of the Courier, members of the community will be asked to participate in a more tangible way than just as onlookers. Two. 16 oz. cans whole cranberries (about 4 Cups), drained or 4 Cups freshly cooked, cooled and drained. 1 Tbsp. Grenadine 4 Egg Whites % Cup Sugar I Cup Heavy Cream, Chilled 8 Beat egg yolks until thick, and lemon yellow, -beat in cranberry juice. Place in saucepan, cook over moderate heat, stirring until thick. Do Not Boil or eggs will curdle. Stir in cranberries, gren- adine, and pour-into bowl. Chill for % hour, un- til it thickens: slightly. Beat egg whites until they foam, gradually add sugar. Continue to beat until stiff. In another bowl whip chilled cream until it holds it’s shape. Take a rubber spatula, fold in cream gently into thickened cranberry mixture, then fold in egg whites. Pour into refrigerator. trays or molds. Cover with foil and freeze until firm. Then the cranberry mousse may be served in scoops like ice cream, unmolded on a plate, or served dir- ectly from a souffle dish. PIE PASTRY FOR ABOVE PIES Yield - ] nine inch pie 1% cups all purpose flour- 4 Tbsp. Chilled Veg. Shortening or Lard 2 Tbsp. Chilled butter, cut into %”’ pieces 1/8 Tsp, Salt 3 Tbsp. Ice Water Combine flour, veg. shortening or lard, butter, and salt into large mixing bowl. Use fingertips and rub flour and fat together until it comes like flakes of coarse meal. Pour the ice water over the mixture, toss together, knead it gently, or until the dough comes together into a compact: ball. Dust lightly, cover with wax paper, chill at least 4 hour. Butter a 9” pie plate. On a flour- ed surface roll into a circle 1/8” thick, 13-14” in diameter. Lift into pan enough dough for slack, flute the edge of dough with fingers. _ CORNBREAD yield — 9 inch loaf 1% Cups Yellow Cornmeal I] Cup all-purpose Flour 1/3 Cup Sugar 1 Tsp. Salt 1 Tbsp. Baking Powder 1% Cups Milk 2 Eggs 6 Tbsp. Melted & Cooled Butter & Tbsp. Melted and Cooled Veg. Shortening Preheat oven 400° Sift cornmeal, flour, sugar, salt, baking powder into bowl. Lightly beat eggs, add shortening, butter, stir in the milk, Add to the dry indredients and beat until smooth. Lightly butter a 9x5x3 inch loaf pan or 8x12 shallow pan, pour in batter. Bake in centre of oven 30 minutes or until bread slightly moves from the edge of pan.
