Cinnamon Scented Carrot and Squash Soup
(4 portions)
1 lb. carrot (1/2 inch pieces)
1 lb. squash (1/2 inch cubes)
1 white onion (diced)
‘ee 1 clove garlic (crushed)
\ ee 4cups chicken or vegetable stock
1 tbs. olive oil
1/2 tsp. cinnamon
ltsp. salt
1 tsp. white pepper

In a large pot saute onions, carrots, and squash until
onions are translucent. Add garlic for 1 minute then add
the stock and boil. After 5 minutes reduce heat and let
simmer for 1 hour. Add seasoning and puree in a blender.
A potato masher will also work.

Cut tomatoes into 4 and slice onion thin. Mix remaining
items and toss onion and tomato in dressing. Season with
salt and pepper.

Tandoori Chicken with Raisin, Walnut, Rice
3 1b. chicken (Skinless)
1/3 cup plain yogurt
3 clove garlic (crushed)
20z lemon juice (1/2 to 1 lemon)
1 tbs. fresh ginger (crushed)
1 tbs. cumin
ltsp. salt
l tsp. chili powder
1.5 cups white rice
20z raisins
20zZ walnuts (chopped)

Combine first 8 ingredients except chicken to create
marinade. Cover meat in the paste and refrigerate for at
least 4 hours and up to 24 hours. Bake in 375F oven for
approx. 40 minutes. Cook rice in 3 cups water. Add
raisins and nuts when rice is 90 percent cooked.
