Ladies Luncheon On Tuesday, January 17th, the first of what is hoped to be a regular monthly Ladies Luncheon was held at the Cassiar Community Club. An ex- cellent hot and cold buffet was enjoyed by about 30 ladies who then relaxed to listen to the guest speaker, Mayor Ione Christensen of Whitehorse. Mayor Christensen proved to be charming and articulate, speaking first on the proposed Alaska Highway Pipeline. She said that those people who hoped to gain by land speculation would probably be disappointed. The task force employed to complete the pipeline will be temp- orary residents of the area and therefore are not expected to purchase property. In general, it will mean expanded business for the town of Whitehorse, but for a limited period. The oyer- all permanent population growth would be approximately 250. This number would certainly not warrant big expansion plans — the hoped for plus being that the building of the pipeline will be the forerunner of other growth; e.g. hydro power. _ Mayor Christensen spoke then on women’s “involvement in the community, advocating the Toastmistress’s Club as an excellent way of developing speaking skills and self-confidence. Involvement in the club often becomes a spring-board into community affairs. Several people present expressed interest in starting a branch in Cassiar; it is to be hoped that the idea takes hold. Those ladies who didn’t partake of the luncheon certainly missed a pleasant and enter- taining tv two hours. C. As a result of Marie Tracy’s recent visit to Cassiar I became interested in offering this program to the stu- dents of our community. The program is designed to assist each individual in finding more positive practice to replace the smoking habit. The program consists of ten, one hour sessions held ' twice weekly over a five week period. Sessions 1 — 5 deals with preparation for quitting. Session 5 teaching quitting Sessions 6 — 10 preparation for a non-smoking future. An enrollment of not more than 12 and not less than 6 are required to offer the program. Also it is extremely imperative if you are striving for success that you attend each meeting. The first meeting will be held at my home, 385 McDame Street on February 17 at 7:30 pm. A convienient schedule for the remaining sessions will be decided upon thea.. Valentinus, while assisting Christian martyrs during their persecution under Emperor Claudius |] in Rome, was arrested anc imprisoned, While in jail he formed a friendshig with the blind daughter of the jailer and, legenc says, restored her sight. When he was taken before Emperor Clau- dius, instead of begging for mercy, he tried to convert the emperor to Christianity, Claudius was so favorably impressed by the priest’s personality that he attempted to save Valen- tinus by trying to convert him to the Roman gods, The priest courageously scorned the Roman gods, saying that they were ‘Men mortal and merchant and full of evil’, En- raged, the Emperor immediately condemned Valentinus first to be beaten with clubs, then stoned, and finally beheaded. On the eve of his execution, ‘Valentinus wrote a farewell letter to the jailer’s daughter and signed it ‘From Your Valentine’. He was buried in what is now the Church of Praxedes in Rome. It is said that a pink almond tree, a symbol of abiding love, blossomed near his grave. The death of Valentinus occurred on the eve of the ancient festival of the Lupercalia which honored Faunus, Roman god of animal life and guardian of the secret lore of nature. Not too many years later, Christianity spread over Rome. The early Christians, who were continually getting tangled up between the Roman festivals and their own church holi- days, confused the ideas of the Lupercalia and the martyrdom of Valentinus, Out of the confusion, it is said, evolved the St. Valentine’s Day which we now celebrate. - Many customs and superstitions came to be associated with the observance. People once believed that the birds began to mate on February 14th. Snails 4 doz. Snail Shells ¥% cup Butter 2 finely minced Shallots 1 large Garlic clove: - (peeled and pressed) 1 T minced fresh Parsley 1 tsp. Chervil 1 T minced fresh Chives (or 1 tsp. dried chives) ¥ tsp. Salt, %4 tsp. Pepper _ Y, tsp. Paprika 1 T Brandy Drain the can of snails. Heat the over to 450 Cream together: Butter, Seasonings, add the Brandy last. Blend smoothly. Put a small amount of the Butter mixture in each snail shell. Insert a snail, and close the opening ~ evenly with more of the creamed butter. Bake 6 or 7 minutes. Serve Hot - Hot. If you have extra snails, prepare as above and freeze. Snails absolutely require crusty French Bread and a real gourmet literally mops up his snail dish sauce with bread. Wilted Spinach Salad 4 T Olive Oil 1 large Garlic Clove “e (crushed and chopped) 2 T Soy Sauce ; ¥ cup thinly sliced Water Chestnuts Freshly Ground Pepper 2 T Lemon Juice 1 Lb. Spinach (washed, dried, and crisped) _ Salt to taste 2 Hard-boiled eggs, coarsely chopped 8 Strips crisp Bacon - chopped _ Cook oil and garlic over medium heat 2 minutes. Add the Soy Sauce, water chestnurs and pepper, Cook 1 minute, ; ,jtoss the Chestnuts. Add the lemon and blend. Add the Spinach and toss. Taste for Salt. Transfer to Salad Bowl and garnish with egg and bacon. Serve warm. Duck 2 Ducks White Wine, Dry Orange Juice, . frozen and unsweetened “Oranges, fresh Butter Flour | Basil Parsley Duck is a fat bird and does not require basting. Remove some of the fat as it 1s cooking. Use a pan with a rack. Prick the Duck from time to time as it is cooking. Do i Not Truss. Herbs, - Preheat oven to 300. Slice 2 oranges for each Duck, rind and all and put into Duck. Allow 25 - 30 minutes cooking time per pound. Sauce: Dilute orange juice according to instructions on can. In a sauce pan mix 3 T of Butter and 4 T of Flour. In a jug make a mixture of about half white wine and _ half Orange juice. Add a small amount of liquid at a time over low heat to the roux (butter and flour). As the sauce cooks it will thicken. If too thick, add more liquid. Take the Duck from the oven. Put on oven proof serving platter. Returning to oven to keep warm. (Low oven) Pour as much fat as you can out of the Duck pan, preserving the dark- colored meat juices. Put the pan» over a hot heat and add a little of the orange juice and wine mixture (not sauce). Stir with a wooden spoon. Pour this mixture into the sauce. Season with Salt and Pepper to taste. Add a little Basil. Garnish Duck with orange slices and Parsley. Serve sauce in Gravy Boat. . WILD RICE . - Wash 1 cup of Wild Rice under cold running water, and drain it. Put it into a saucepan with 3 cups of cold water and % teaspoon salt. Cover and bring to a boil. Remove cover and continue boiling without stirring until the rice is tender. If necessary, add more water, when it is cooked, drain away any excess water, and add 3 knobs of butter. Season to taste. ASPARAGUS TIP SOUFFLE 2Ibs. Asparagus Salt 4 T Flour 4 T Butter 2 cups Milk Pepper — 4 Eggs Nutmeg Clean asparagus and cook them in salted water for 20 minutes. Drain and use only the top halves. Melt Butter in a saucepan and mix in the Flour. Gradually add the milk, stirring continuously with a wooden spoon, to obtain a White Sauce. Add salt and pepper. Separate the eggs, Beat the egg whites until stiff. Blend first the yolks, then the whites into the white sauce, away from the flame. Pour half the mixture into a well-greased souffle dish. Add the asparagus, remaining sauce mixture. Sprinkle with a little grated nutmeg. Bake in a moderate oven for 15 minutes. Serve as soon as it is ready — A souffle cannot wait. GARLIC TOMATOES 6 lge. Tomatoes ¥% cup Butter 2 Minced Garlic Cloves ¥% cup Breadcrumbs Oregano, a dash ¥Y tsp. Salt. Fresh Parsley, finely chopped Preheat over to 350, cut tops off tomatoes, with a knife, carefully remove a portion of the pulp. Mash and set aside. In a frying pan, melt Butter, add Garlic and cook briefly. Add Breadcrumbs, Oregano and Salt, and toss. © then cover with the} Cassiar Courier February 1978 5 Put tomatoes in a baking pan and pour Breadcrumb mixture. into and over them. Bake about 10-15 minutes, depending upon firmness of tomatoes. Sprinkle with parsley. Serve immediately. SALZBURGER NOCKERL . 2 Egg Yolks 1 tsp. Vanilla Extract ¥% tsp. Grated Lemon Peel 1 T Flour 4 Egg Whites Pinch of Salt 2 T Sugar Confectioners’ Sugar Preheat oven to 350. In a medium- sized mixing bowl, break the egg yolks up with a fork and stir in the vanilla and lemon peel. Sprinkle the flour over the yolk mixture. In another bowl, whites with a pinch of salt until they cling to the beater. Add the sugar and beat until the whites form stiff, unwavering peaks. With a_ rubber spatula, stir an overflowing table- | spoon of the whites into the yolk mixture, then reverse the process and fold the yolk mixture into the rest of the egg whites, using an over- | under cutting motion. DON’T OVER- FOLD! Generously butter an oval or oblong | 8 x 10 x 2 inch baking dish attractive enough to serve from, using the rubber spatula, make 3 mounds of the mixture |, in the dish. Bake the Nockerl in the, middle of the oven 10-12 minutes or until it is lightly brown on the outside but still soft on the inside.
