New shoots rise from the ground, a new crop is to be planted in the earth and the young are horn. New life predomin- ates the activity of the whole earth cycle and the Christian _ conmunity shares that excitement -and job of new beginnings. It is a special time for Christians. caught up in the celebration of the Resurrection of Jesus from the dead. The sift of life - the assurance that God stands ready to give life to those who ask in Jesus name - is emphasized by the fact that God the Father raised His Son from the dead. It is the revelation which all Christians know is significant for them because the act of resur- rection showed that . for them because the act of resur- rection showed that Jesus' promise of eternal life was in fact true. God came into the world he created through Ilis Son to show mankind a better way to live. Life is precious, so precious in fact that without God in our lives we are tossed and turned by every wind of doctrine. Any new idea that comes along will be followed. It is not just a personal faith in the person of Christ, it is a shared active life with other people: who believe that God is always with us. We in faith share the Resurrec- tion of Jesus in our own lives by not being conformed to the world — but living together in it. The mystery of the Resurrection - the Easter story - brings as new life. Certainly we do not and can- not fully understand how God the Father accomplished it but by faith we sense the Glory of God in it. God has intervened in His Creation and restored it to himself through Ilis Son. Spread them with softened butter and sprinkle each with 1 teaspoon freshly grated Parmesan cheese. Toast the slices in a pre- heated moderately slow oven (325 F) until they are brown. Let them cool and arrange them in a bread basket. Serves four. In a heavy skillet saute 3 cups of thinly sliced onion in 3 tablespoons butter and 5 tablespoon oil for 30 to 40 minutes, or until they are well browned. Stir in 4 teaspoon each of flour, salt and Dijon-style mustard and pepper to taste and cook the mixture for 2 minutes. Pour 4 cups beef broth, heated and % cup dry. Sherry and cook the soup over low heat, stirring until it comes to a boil. Simmer it for 30 minutes. Transfer the soup to a flameproof = earthware casserole and sprinkle it with 4, and grated Cheddar or Gruyere cheese. cup of grated Parmesan cheese Put the casserole under a pre-heated broiler for 3 to 4 minutes or until the cheese is brown and bubbly. Avocado and Grapefruit Salad 2 ripe Avocados 2 pink Grapefruit Romaine Lettuce Delicado: Dressing Salt Coarse cracked peppers Peel and slice avocados. Peel prape— fruit and serve in sections. Chicken Kiev ay Have the butcher skin, de-bone and half 4 whole small chicken breasts leaving the main wing bone Betached to each half breast. Detach the filet strip from each half and with a meal pounder flatten the breast, skinned side down, and the filet strips between sheets of wax paper, scoring the thick areas of the breast with a knife so that they flatten more easily. Sprinkle the breast with salt and pepper and put an herbed butter finger on each half breast. Cover the butter with the flattened filets, roll the chicken around the butter, tucking in the edges to contain the butter, and chill the chicken for at least 4 hours or overnight. In a shallow dish heat 2 epes with .1 teaspoon vegetable oil. Dust the chicken with flour, coat it with eps mixture and roll each piece in day-old bread crumbs. Tomatoes Stuffed with Saffron Rice Cut a 3/4 inch slice from the top of 4 tomatoes and gently squeeze out the seeds. Cut around the pulp with a curved knife, remove the pulp, leaving a 1/3 inch shell, and chop and reserve it. Sprinkle the tomatoes with salt and a pinch of sugar and let them drain, in- verted, for 30 minutes. In a small dish arrange the tomatoes close together right side up, brush then inside and out with oil, and sprinkle them with thyme, salt, and a pinch of sugar.
