é @e@eeoeeeee ds 9 G1 Rafe 14° Casciat Courier This week I would like to introduce you to a number of sauces that were the subject of a re- cent Northern Lights Cooking Class. The first dish features Bechamel Sauce. This sauce is of Italian origin and was first introduced to France by Catherine de Medici. It is. one of the basic sauces and is the result of bathing a piece of onion, studded with a bay leaf and sey- eral cloves, in warm milk and simmering for 5 - 10 minutes to get the desired bouquet and then adding to a roux of flour and butter. It was stat- ed at the time that more or less the same result could be attained by using a 4 litre of Homo straight from the fridge, but it would also take a lot of fun out of cooking. The second sauce is Grande-Venoire and is the french equivalent of sweet and sour sauce. This sauce was tried and tasted at every stage of its production, including the vinegar reduction, by the insatiable Bill Constable. The third recipe, Entrecote Bordalaise was a re- quest from Sandy Crawford, for whom it brought back memories of an intimate dinner in some never to be forgotten Vancouver restaur- ant. Last, but not least, we have Hollandaise sauce, which was requested by Doreen Clements — just because she likes to see a man sweat over a hot ° stove for a change! BECHAMEL SAUCE % litre milk, 2 oz. butter, 2 oz. flour, % onion studded with a bay leaf and clove. 1. Heat milk and studded onion. 2. Melt 2 oz. of butter in thick bottomed pan. 3. Add flour and mix in. 4. Cook for a few minutes over gentle heat with- out colouring. 5. Gradually add warm milk and_ stir until smooth, _ 6. Add the onion to the sauce and simmer for 20 minutes. Minor Hocke A tournament in Watson Lake on January 27 was held with great success and fun for all. The teams — Bantam Midgets, Pee Wees and Pups. played to a large crowd of Cassiar fans. Add a little bechamel to the bottom of four - scallop shells in a gratin dish 5. Add the scallops and cover with rest of sauce 6. Sprinkle with parmesan and brown under a grill SAUCE GRANDE— VENOIR (% litre or ¥% pt. serves 4 - 6) I oz. carrot, I oz. onion, % oz, celery, ¥ bay leaf, sprig of thyme, ¥% oz. butter, 1/8 pint vine- gar, 2 tbsp. red currant jelly, % pint demi-glace or thickened beef gravy. I. Sweat the first 6 ingredients in a thick- bottomed pan. 2. Add vinegar and reduce by two-thirds 3. Add red currant jelly and melt 4. Add demi-glace and simmer 5. Pass through strainer This sauce is generally used with various kinds of game. If a garnish of thin julienne of beetroot white of egg, dill, mushroom, truffle and tongue are added it is then called Sauce Reform and is traditionally served with lamb cutlets.’ SAUCE BORDALAISE (¥ pint) 2 oz. chopped shallots % pint red wine | ' @ few peppercorns sprig of thyme bay leaf %2 pint demi-glace Place first five items in pan and boil until re-- duced by a quarter. Add demi-glace and simmer SPORTS Curlin Curling is fast approaching Annual Bonspiel time. The dates are March 20 - 23, 1980 and the banquet will be held Saturday, March 22. Representing Cassiar in the Yukon playdowns - ‘Dave Dunkin, Ciril Habjan, Neil McGowan and _ Percy Adams just came back from curling in the Faro Consuls, Jan. 18, 19 and 20th — tired but happy! ENTRECOTE BORDALAISE Fry four New York steaks extra fine. Trim to your liking, Place a couple of pieces of bone marrow, which have been poached, on the steaks and cover with the sauce. HOLLONDAISE SAUCE (1 pint) 8 oz. butter 2 egg yolks 6 crushed peppercorns 1 tbsp. vinegar I tbsp. water 1. Melt butter and remove any solids that come to the top, and set butter aside 2. Put peppercorns, vinegar and water into pan and reduce by two-thirds 3. Let it cool a little and add egg yolks and whisk 4. Return to gentle heat, whisking continuously till yolks become thick and creamy (sabayo stage) ' 5. Whisk in gradually the melted butter till com- pletely combined 6. Correct seasoning. At this point a squeeze of lemon may be added 7. Strain through a fine strainer This sauce should be kept only slightly warm and is served with poached fish, e.g. salmon, trout, turbot and vegetables, asparagus, cauli- flower and broccolli and is also used in Eggs - Benedict. by Terry Farrell Badminton Three Badminton players from Cassiar were in Van- couver in January for the B.C. Provincial Playdowns. The three players were Anil Kaul, Atul Kaul and Olavo Santos and the results were as follows: Anil Kaul — 3rd Overall in the 14 and under age _ group Atul Kaul — 6th overall in the 16 and under . age-group Olavo Santo — 10th overall in the 16 and under age group Senior Hockey The month of December for Senior Hockey was very. quiet, due to a breakdown in the Arena. One highlight, however, was the Senior’s trip to. White- horse to play in a tournament the first week of - December. Cassiar came away winners in the “‘B” Event. Congratulations to all team members. - When the ice was back in the Arena, we had the Watson Lake Senior Team come to town for a two game event. Cassiar won these two games on January 13th, 9 to 2 and 8 to S. The Cassiar team ~ will go to Watson Lake to play on February 3. Good luck to the team. ; The Cassiar team will, if possible, take part in a tournament in Watson Lake, February 15, 16 and 17, with teams from Faro, Whitehorse, Fort Nel- son and the host team taking part. DEPARTMENT OF TRANSPORTATION & HIGHWAYS’ NEWS Two contracts, one for paving and the other for construction along the Stewart-Cassiar Highway 37, have been awarded at a total cost of $7.64 million, providing employment for almost 100 workers, it was announced today by Transport- ation and Highways Minister Alex V. Fraser. First contract is for a 54.6 kilometre paving job on the Stewart-Meziadin Lake Road section of - Highway 37 scheduled to begin in April with completion by the end of July. Central Paving and Engineering Ltd., of Prince George, submit- ted the lowest of six tenders for the job at $1,507,840. Total cost, including engineering sup- ervision and materials, will be $2,760,000. The paving will be installed on the Stewart- Meziadin Lake Road from Bear River Bridge No.1 easterly to Surprise Creek, a distance of 48 kilo- metres, by a work crew of 40. In addition, 6.6 kilometres will be paved from the same bridge westerly to the B.C.-Alaska border. Gravel crush- ing will begin in April. The contract calls for base preparation of existing gravel surface, followed by installation of primer and asphalt paving. Second contract, awarded to Miller Contracting Ltd., Richmond, is for the construction of 18 kilometres of Highway 37, beginning 44.6 kilo- metres north of the Skeena River bridge at Kit- wanga, north to the Cranberry River bridge. The firm submitted the lowest of 11 tenders for the job at $3,875,175 and will begin mobilization for the project immediately with a start on the actual work scheduled for March, and completion by October, using a crew of 50 workers. Total cost of the construction project, including engineering supervision and materials, will be $4,880,000. The projects are two of several announced by Highways Minister Fraser during a fact finding trip to the area last October, keep working R.GMLP. NEWS Cassiar Court - Jan. 16, 1980 — John Milton Thompson of Cassiar entered a plea of guilty to-a charge of impaired driving, which was waived up from Quesnel, B.C. He was fined $500.00, in default 30 days in jail, and his license . was suspended. ~ ' Eric David Liddle of Cassiar, entered a plea of guilty to a charge of wilful damage, which was’ waived up from Maple Ridge, B:C. He was fined $100.00 and ordered to pay compensation in the amount of $28.00. Anthony Brian Ditmars of Cassiar, entered a plea of guilty to a charge of wilful damage, when he tried to chop his way into the Cassiar dog pound on the 19th Dec., 1979. He was fined $150.00. Veronica Dennis of Good Hope Lake, entered a plea of guilty to a charge of causing a disturb- ance at the Cassiar Snack Bar. She was placed on a one year suspended sentence, with probation to attend an alcoholic program. Valdemar Silva Isidoro of Cassiar went to trial on the following charges, resulting from an incident at Cassiar on the 11 Mar., 1979: : 1) possession of a weapon dangerous to the public peace 2) common assault _ He was found guilty on both counts, and fined $150.00 and $250.00 respectively. Terrance Richard Kean of Good Hope Lake went on trial on the following charges, after an incident at the Cassiar Lounge on the 30 May, 1979- 1) failing to leave a licensed premise - 2) resisting arrest 3) assaulting a Peace Officer He was found guilty on Counts No. 1 & 3, and was fined $500.00 and $400.00 respectively.
