GEORGE ZIMMICK and his friendly wife are back at Centreville again. They are early this year, but George wants to get some of the heavy work out of the way before he starts mining this summer. His jade and gold jewelry is on sale at Centreville. It is quite reasonable and very unique. Also, George in- vites all his visitors to look over his mining operation and dig for some gold nuggets, if you can find then. Also back in town, for Easter Vacation this time, are most of the students who attend school out of Cassiar. It seems Tanya and Elizabeth planned a dinner party recently. They asked a certain Hungarian to get their turkey out of cold storage - a snow bank on the hospital grounds - . Well, he dug and dug and searched his heart out, but no turkey did he find. Dr. Navin was wondering if the canine families of the married nurses might have searched and dug before Frank. Has anyone seen Ralph, Trudy, Suzie or Coco with suspicious looking mouthfuls lately?! When Tanya and Elizabeth find their turkey, or change their minds and use chicken, we have a perfect recipie for them. Odette has again given us one, and here it is: WATERZOOI de POULET (Belgian Chicken in a pot) 3 whole chicken breasts 4 sprigs parsley — 2 veal knuckles 1 tblspn salt 7 cups of water 4s tspn white pepper 1 cup celery (sliced) 3 slices lemon 1 parsnip 2 egg yolks 2 carrots 1 cup light cream Cut the breasts in half through the bone; wash and dry. Combine the veal knuckles, water, celery, parsnip carrots, parsley, salt and pepper, and lemon in a saucepan. Bring to a boil; cover and cook over low heat for 2 hours. Strain into an attractive pot or casserole. Add the chicken, bring to a boil and cook over low heat for 25 min. or until chicken is tender. Beat the egg yolk and cream in a bowl. Gradually add a little of the hot stock, stirring steadily to pre- vent curdling. Return to balance of soup. Heat, stirring until thickened, but do not let boil. Serve with French bread. / (Serves 4-8).
