- Cut pineapples in half, scoop out the middle to

form a shell. Place on a suitable sized plate, sur-
round with crushed ice. Color the ice with a few
drops of red food color, Pour the soup into the
pineapple and serve.

DUCK BIGARDE
(Duck with Orange Sauce) ,

Two 4 lb. Ducks
6 Oranges

I Lemon

2 Thlsp. Vinegar
6 Cubes Sugar

1 Pint Stock

Place the ducks on a bed of vegetables (chopped
onions, carrotsg celery), season. and. cover with
butter. Cover and cook in a 370 to 400 oven,
basting frequently. When cooked, remove the
duck and pour off the cooking grease. Add the
stock and reduce _ the liquid by half. Cut into
julienne strips the zest of the oranges and lemon,
and squeeze the juice from the oranges and lem-

on and add to the liquid in the roasting pan. Add —

the vinegar and sugar. Strain the sauce, remove

any grease, and adjust the seasoning. If the sauce

is too thin, thicken with a little cornstarch. Add.

the julienne strips. Serve the duck with the sauce.
Garnish with orange slices and parsley.

To give a little zest to the sauce you can add
Grand Marnier.

CHOCOLATE SOUFFLE

2 oz, Butter °
7 egg whites

4 egg yolks

2 oz. flour

3 oz. sugar

% pint milk

3 oz. powdered chocolate

Butter and sugar the souffle dish. Melt the but-

ter in a pan, add flour. When blended, add the-

milk, chocolate, and sugar, stirring all the time,
and bring to a boil. Remove from the stove and
allow to cool slightly. Beat in the egg yolks.
Whisk the egg whites until stiff and fold into the
mixture. Pour into the souffle mold. Set to bake
for 20 to 25 minutes at 350.

Must be served immediately.
