LOBSTER SALAD IN A COCONUT SHELL

VICHYSSOISE

Slice white part of leeks and slice onion and
saute till tender but not brown. Slice potatoes
thinly, Add to leeks and onion, cover with chic-

ken broth, add salt and cook until potatoes are
soft.

Blend all ingredients in blender until smooth,:

then refrigerate. When cold, add milk and cream
and garnish with chives.

ITALIAN GOURMET SALAD

6 Avocados sprinkled with lemon

1 tbsp. fresh parsley

1 tbsp. spanish capers — chopned rine
1 tbsp. prepared horseradish

% cup mayonnaise

% cup chili sauce

% tsp. crushed red peppers

’ tsp. freshly ground pepper

% tsp. salt

1 small garlic clove cut up

Take onions, minced green pepper, capers and

horseradish, put in strainer and let stand for 15
minutes.

Combine mayonnaise and chili sauce in a bowl.
Add crushed pepper, salt and black pepper and
garlic. Whip well together with a wisk. Add the

strained ingredients and wisk again. Put in jar
and refrigerate.
