Page 14 Cassiar Courier August 1990 NEIGHBOUR‘S KITCHEN BY SHARON RISEBOROUGH ORANGE-SPICED CARROTS 1/2 cup orange juice 1 tablespoon brown sugar 1 1/2 teaspoons cornstarch 1/8 teaspoon ginger 1/8 teaspoon nutmeg, if desired 2 1/2 cups sliced carrots, cooked Chopped fresh parsley, if desired In medium saucepan, combine orange juice, brown sugar, corn- starch, ginger and nutmeg; blend well. Stir in carrots. Cook: over medium heat until thickened, stirring constantly. Sprinkle with parsley. 4 (1/2 -cup) ser- vings. CREAMY TOPPED BAKED POTATOES 4 medium baking potatoes TOPPING 3/4 cup plain lowfat yogurt 1/4 cup bottled reduced-calorie blue cheese or ranch dressing ~ 2 tablespoons chopped fresh chives MICROWAVE DRE ONS Pierce atacdes with fork. Microwave on HIGH for 10 to 13 minutes or until tender, turning once halfway through baking. Let stand 10 minutes. Meanwhile, in small bowl combine topping ingredients; blend well. Serve over hot baked potatoes. 4 servings. CHILLED ASPARAGUS WITH DIJON VINAIGRETTE 1/4 cup water 20 fresh asparagus stalks, med trim- VINAIGRETTE 1 tablespoon finely chopped green onions 1/4 teaspoon sugar 1/8 teaspoon white pepper 3 tablespoons water 2 tablespoons white wine vinegar 1 teaspoon Dijon mustard MICROWAVE DIRECTIONS: In 12x8- inch (2-quart) microwave-safe dish, combine 1/4 cup water and asparagus, arranging flower ends toward center and stalk ends to- ward outside edge. Cover with microwave-safe plastic wrap. Microwave on:HIGH for 3 to 5 min- utes or until asparagus is crisp- tender, rotating dish 1/2 turn halfway through cooking; drain. Meanwhile, in jar with tight - fitting lid .combine vinaigrette ingredients; shake well. Pour vinaigrette over asparagus; toss to coat. Cover and refrigerate 2 to 3 hours, tossing occasionally. 4 to 5 servings. The class travelled to NorthWestel to visit the instal- lation and were given a tour by one of the technicians. Mr. Richard Rudkowsky organized the day of the trip. A second field trip was to W.S.T.V. where Werner Schneeber- ger gave the class both a tour of the cablevision technology as well as instruction in the func- tion of key components. Finally, thanks to John Slana for spending 3 scheduled hours dealing with radio com- munications. The class was able and to listen and converse with people throughout the world.
