Why not try some of these dessert recipes and have.a very enjoyable Thanksgiving Day, or CHRISTMAS! PUMPKIN PIE ¥% Cup Heavy Cream ¥% Cup Milk % Cup:Dark Brown Sugar i _I tsp Cinnamon 1/8 Tsp. Ground Cloves 4% Tsp. Ground Ginger 3 Eggs Beaten Slightly 2 Tbsp. Applejack 1% Cups Pureed Pumpkin, freshly cooked or Canned Combine cream, milk, brown sugar, cinnamon, cloves and ginger in a mixing bowl. Stir thor- oughly. Add eggs, applejack. Stir in pureed pumpkin. Pour into pie shell. Bake 40 - 50 min- utes in centre of oven or until filling is firm and centre does not quiver. Serve warm or cold with vanilla ice cream or whipped cream. PECAN PIE 4 Eggs 2 Cups Dark Corn Syrup 2 Tbsp. Melted-Butter 1 Tsp. Vanilla . 1% Cups Pecans Beat eggs in mixing bowl for 30 seconds. Slowly pour in syrup until well mixed. Beat in butter, vanilla, and stir in pecans. Pour into pie shell. Bake in middle of.oven 35 - 40 minutes, or until firm, Serve warm or cooled. MAPLE MOUSSE Yield — 6 - 8 persons l envelope plus 2 Tsp. unflavored gelatin ¥% Cup Cold Water 1 Cup Pure Maple Syrup 4Ege yolks 4% Cup Brown Sugar 4 Egg Whites 2 Cups Chilled Heavy Cream In our last issue we published an article on the changes in the Grocery Store (See “Sellabration”’ September),.We promised then that we would be asking for your comments and here they are ..... Put cup into simmering water un- - til gelatin is dissolved. Combine with maple syrup. Beat egg yolks 2 to 3 minutes until thick and lemon yellow. Beat into yolks the syrup- gelatin mixture and pour into a small saucepan. Cook over moderate heat, stirring constantly un- til mixture thickens enough to coat spoon. Re- move from heat,:stir in brown sugar. Mix thor-— oughly. Transfer to a large bowl and cool to room temperature. Beat egg whites until unwavering peaks on the beater. In another bowl whip the chilled cream to hold its shape softly. Fold in with a rubber spatula the cream thoroughly into syrup then fold in egg whites. Rinse 142 quart mold in ‘cold water, shake out excess water, pour in mousse mixture, Chill for 4 hours or until firm. To unmold run knife around edge, dip bottom in hot water. Ms. Shellard, who originally hails from Langley, B.C., will teach the primary grades here. Her predecessor, Al Passarell, has left the teach- ing profession and gone into politics as MLA for Atlin riding. Mrs. ‘Kathy Green, here for her second year, is teaching the intermediate grades. Mrs. Bonnie Greer, here for her fifth year, is the © kindergarten teacher.
