SANDRA _ BERKELEY:

Seems we have two Sandy's this month.

Sandy Berkeley, who works in the Retail
Store as Cashier can have your groceries added
up quicker thas you can take them out of the
basket - has been a Cassiar resident since
February this year.

Sandy lived in and around Vancouver all her
life before coming North to Cassiar.

Sandy likes the people up here but admits
to missing the shopping facilities of the South.

She enjoys parties and likes music especially,

she also enjoys sewing and knitting.

Ladies - we have a good recipe for you to
try out this month.

EBERSWALDER SPRITZKUCHEN (GERMAN DO=NUTS)

These donuts are scrumptious! Irma Tischler
has kindly shared this delicacy with us. A
good hint is to freeze the donuts that aren't
eaten immediately. After being thawed out they
are really nice and fresh.

INGREDIENTS.
Dough:

3 oz. butter
l tbsp corn starch

14s cups water
1.3/4 cups flour

1 tbsp. sugar l tsp. vanilla
4 - 6 eggs 1 tsp. baking powder
Icing:

7 oz icing sugar 4 drops lemon extract

3 tbsp. hot water
Method:

Bring water and fat to boiling point, remove
from stove and quickly stir in the flour and

corn starch, until it resembles a large
dumpling. Return mixture to the stove for
one minute and stir it well,

Put the mixture in a bowl and stir in the
eggs, one at a time, then, mix in vanilla and
sugar.

When the dough has a glossy shine and
clings to a spoon, add the baking powder and
mix well. Drop from a teaspoon into hot
far (375°) about 3 to 4 minutes, turning once.
Drain. While still warm, dip in icing.
