Herbie did not like to be worried about any- thing. And in order to remain unworried he checked. He was a superb checker. But he liked to check before the wrong feeling, rather than after it! It was constant check- ing that kept him completely free of worry feelings. Where did | miss, he thought. | followed my daily proced- ure. It’s on paper. Here is the daily sheet! The work re- cord duly ticked off and signatoried! | did it and I’m o.k. He looked down the list of cae weekly and monthly cs ae That’s there! That’s there! That's there! This is that! : And that is that and that’s there! That's there That’s that! O.K.! That's that! Nothing can be wrong then! All the maintenance is done! We gave the main garage a post-dated check and 3 years to finish! So what’s wrong! He looked out his win- dow. Nothing but blasted stars. Millions of them! Too damn many, he thought. There’s no need for it! But there was nothing out there to worry him. The yellow disc should be sliding slowly past his window about now. If everything is right it should be out there sliding slowly past his curtained window. Just about now he thought. Making time seem timeless, like the den- tal assistant does. Clocks take their time about everything, ‘ he thought. He looked out his window again. NO disc. No- thing! And, and again and, as he looked out his curtained window he knew that his wrong feeling was right. His instinct for the oddness, the unmeshing, the tiny decay in immutable space type laws was correct! Because outside his window was something that should never be there by any reach of chacy computers or man made imagination! It was a rocket powered freighting pallet on which was standing a tall man dressed in cowboy boots, a blue smock and a white hard hat. The man had his arms folded across his chest and he was talking! You could tell by the puffs of steam. Slung across his chest was a battery radio tuned full blast to the news! There was a thermos of cof- fee laced with a gas additive or paint thinner in his smock pocket! Holy Smoke, thought Herbie. That can’t be Cee Dee Gaul! Maybe it’s a well known local conducting a self-con- tained dialogue quoting the Marquis De Sad . Or is he maintaining a debate on logic versus creative intellect? He’s probably. transporting fresh laundry somewhere. Maybe Camp 2? At least I’m sane! Everything is possible! The figure smiled and waved. The pallet turned and moved directly away. He went to the boiler room and there found a spider’s web, some dusty flies and a swallow’s nest made from fresh mud! And the nest con- \ tained five perfect little green eggs! Nice and warm! Herbie moaned out loud and squeezed his eyes shut. Oi Vail Oi Yoi Yo Yoi Yoi, he groaned. | should live so long to come to this. This in part explains why a trip there was put off to near the end of. our vacation, delaying the dilemma of which restaurants to pick and which show | to book for.— a subject of frequent debate and much soul- searching. We finally decided on three venues that we ; thought would give us a good cross section of the available eating establishments. If Cassiar is a town of too much snow, London, England is | ~ | Our first choice was the Savoy Hotel, which this year cele- brates its one hundreth anniversary — never once in all that | j time dropping from its position as one of London’s ee five hotels. ~ August Escoffier, who first opened the Savoy kitchens, had a love of the theatre, and the stars of the theatre loved his | __ food, often asking him to create a new dish just for them | which consequently left us a legacy of haute-cuisine recipes named after stars of West End shows and other personalites. Probably the most commonly known is Peach Melba, which | he concocted for Dame Nellie when she asked him to pro- duce something new on the spur of the moment. Vying for top position in this category are The Roux Brothers La Gavroche, Guy Mouilleron’s Ma Cuisine, named after Escoffier’s famous cookbook, and Pierre Koff- man’s La Tante Claire, all of which hold Michelin stars. Taking the advice of a friend who had tried all three, we chose Tante Claire. This discreet little restaurant on Royal Hospital Road is situated just at the rear of Buck House and many a titled person Nas been Meena to gee in for a bit of late supper. Our choice proved an excellent end to the evening — after seeing “Evita” at the Prince Edward theatre. It felt like we had been transported from the Casa Rosada to the Rue St. Germaine without the jet lag. Our third choice was the Capital Hotel, an unpretentious four star hotel in Knightsbridge. Tucked away in a side street at the back of Harrod’s Store, where a thirty-three - year old Yorkshireman, Brian Turner, has been getting a name for himself as one of London’s most promising new chefs — a point that intrigued us as it is not usual to find a British born head chef in one of London’s leading hotels, let alone one from the provinces.Our reward was what must have been quite the finest meal of our vacation. That was certainly not hindered by the attentive and friendly service of maitre d’ Dieter Shultz. Here are-a sampling of recipes from these three very excellent restaurants. : TORNADO LANGTRY SAVOY HOTEL Saute some small tenderloin steaks. Meanwhile poach some artichoke bottoms in a mixture of white wine and chicken stock, seasoned with bay leaf and ground coriander. When everything is quite ready, place the steak on a plate, drain the artichokes and place on top of the steaks. Fill the bottoms with the con- casse, surmount this with a black olive, garnish with tarra- gon leaves. Serve bearnaise sauce separately. RABLE DE LIEVRE SAINT HUBERT LA TANTE CLAIRE Roast one'saddle of hare in a hot oven, keeping underdone. Remove the meat from the pan and portion. Discard any excess fat. Deglace the cooking pan with white wine. Add to this some chopped shallots and wild mushrooms and a cup of game sauce. Bring to a boil. Remove from heat and add a little hot english mustard. Ladle a little sauce over each portion of meat. ROGNONS DE VEAU A LA MUTARD DEMEAUX CAPITAL HOTEL Season 2 Ibs. of veal kidneys, cored and defatted, and brown over high heat. Transfer to oven and cook for five minutes. Transfer kidneys to a plate and keep warm. Dis- card excess fat and deglaze pan with % cup dry white wine and I tablespoon of tawny port, 1 cup of light stock and % cup of fresh cream and reduce by half over moderate heat. Remove kidneys to carving board and slice into one inch slices and arrange them on heated plates. Stir 1 teaspoon stone ground mustard into sauce and simmer. Whisk in 1 tablespoon unsalted butter, ladle a little of the sauce over each portion of meat and sprinkle with chopped parsley, Serves four. The ice is now ready. This will . give anyone who needs a little practice to have free ice time, and it will also give time for all our beginners to re- ceive a few basic pointers from our more experienced curlers.- Draws are changed a little this season. Monday and Wed- nesday will be mixed. leagues, picked from a hat; Tuesday is still Ladies night, and the teams will be picked from a hat. Thursday is Men’s night and it will be enter your own team. Friday is now mixed league, and it will also be enter .your own team. If enough interest is shown, a Saturday evening draw could be set up, and also a ladies daytime draw. Cost of curling is very nominal at $50.00 for the entire season. This price includes curling as often as you want, all club privileges, numerous socials and bonspiels through- out the season, plus two big dinner dances. Social member= ships are also available at a cost of $25.00. This will in- clude all the above with the exclusion of any curling. This is ideal for the spouse who does not curl, but is available to anyone that would like to be part of the Club,but are not going to be curling. The Cassiar School Curling Club has approximately 40 curlers signed up. They will be curling every Tuesday and Thursday afternoons from 3:00 p.m. — 5:00 p.m. They are also planning a bonspiel for this season, competing against some of the other school curling clubs in our area. This is hoped to coincide with the C.C.C. Northern Winter Games weekend. ] It looks like a great year for curling and we would like to extend a personal invitation to you to come on out and be part of it.
