Cassiar Country is a land of plenty. Our lakes and rivers are rich in trout,’ grayling and pike. Our mount- ains and valleys support moose, sheep, goat and caribou. If you are wondering what to do with the fruits of the hunt here are some good recipes for fish from our local waters. ins ’ - PICKLED GRAYLING 3 Bay Leaves Herbs (Rosemary, sage, marjoram, thyme, parsley) 1 Pint white vinegar and 10 oz. red wine Rub the cleaned and prepared fish with salt, dust with flour and fry in a shallow pan of oil together with a little rosemary and 2 sage leaves, until golden-yellow. Place in shallow dish or casserole. For the marinade, slice onions in rings and fry in 2 dessertspoons of the oil in which fish were fried, with the chopped herbs (not too much of each), shredded carrot, cloves and bay leaves (if no fresh herbs are avail- able use dried ones but do not fry these), Pour in the wine and vinegar. Bring to the boil and pour over the fish which should be completely covered.’ Keep in a cool place for 2-3 days and serve. Clean and prepare the fish, sprinkle with salt and pepper. Add to the shal- lots and pour in white wine till the fish are about half covered. Sprinkle with lemon juice and allow to simmer very slowly until tender. Lift fish out carefully and keep warm. Melt I 1/4 ozs. butter in a small pan, add flour and cook till light brown. Sieve and stir in the wine in which fish have cooked and allow to. boil until thickened. Blend yolks and milk together and blend into the sauce. Add rest of butter and whisk till the sauce is almost boiling. Pour over the fish and serve. LARDED PIKE Approximately 3 Ibs. of Pike salt 2 ozs. bacon strips for larding 2 ozs. anchovies 3 ozs. butter 2 Tablespoons lemon juice 2 Tablespoons madeira 1/4 pint beef stock 1 Tablespoon capers Clean and dry the pike, sprinkle with salt and lard with bacon and strips of anchovy. Tie together head and tail, so that the fish forms a ring and place in baking dish with butter cut in pieces. Sprinkle with lemon Juice. Bake in medium hot oven for 1-14% hours at 355° F. Raste frequently with butter from time to time adding a little madeira and stock. If the pike gets too brown cover with foil. When cooked place pike on a warm plate to keep hot. If necessary dilute the sauce with stock, bring to boil then pass through a sieve, add capers and fine strips of anchovy and turn into sauceboat to serve with fish. Celsius, It sure doesn’t feel like summer, ' but it is preferable to the gloomy, rain sodden past eight days. So, now that we are moving into a Cassiar fall, its time to get out the scraper for the windshield and the hunting garb. Anybody thinking of spending time in the bush in the next while should be sure to wear bright colours. Camouflage pants may be trendy in town but in the bush you don’t want to be mistaken for a moose. So dress brightly or gaudily. The month of July was a rather quiet time for the Safety Department. Ron Sweeney looked after the department and to give himself practice in filling out accident reports he and Paul MacCrae had a fender bender in the parking lot. Keith is now Director of Instruction for S.D. 87, effec- tive August 15th. However he will also continue his role as principal of Cassiar Secondary School until October Ist by which time a replacement will be hired for that position. Keith came to Cassiar in late summer 1981, at which time he was Vice Principal of Cassiar Elementary/Secondary School. When Snowridge Elementary became a separate entity Keith became Principal of Cassiar Secondary School, a position he has held until this most recent promotion. Keith is also very actively involved in the B.C. Sports Association and is the current President of that association. We wish him the best of luck in his new position.
