From the fresh, hearty centres of Austria we have KALBNUSS ELSASSER ART (veal with sauerkraut) 2 pounds sauerkraut 1% teaspoons salt 1 cup dry white wine % teaspoon freshly ground pepper % teaspoon caraway seeds % cup water 3 pounds boned loin of veal 1 egg yolk 4 tablespoons butter 3 cups seasoned mashed 1 cup chopped onions potatoes Combine the sauerkraut, wine and caraway seeds in a casserole. Cover and cook over low heat 1% hours, stirring frequently. While the sauerkraut is cooking prepare the veal. Cut the veal into % inch thick slices. Melt the butter in a skillet; brown the veal on both sides. Add the onions, salt and pepper, and cook 5 minutes. Add the water; cover and cook over low heat 25 minutes, or until the veal is tender. When the sauerkraut is cooked, arrange the veal over it, and pour pan juices on top. Beat the egg yolk into the potatoes and make a border around the edge of the casserole. Place under a hot broiler until potatoes are delicately browned. (Serves 6-8) To keep those 8 hard cooked eggs for the Palm Oil Chope from spoiling while they are boiling, put a small hole in the shell of the egg, but not through to the egg itself. How? Simple, says Oddette. Insert a fine needle into a small cork with just a smidgeon of the needle showing through. Poke this into the shell, and voila — no more egg releasing into the boiling water! Len is a patient in White- horse hospital, and their’s was a bedside ceremony. According to hospital records, the Maki wedding was the first to take place in the Whitehorse General Hospital. Special C thanks is extended to the local band who donated their services to make it a successful evening, to the Community Club for donating the International Prizes, the Cafeteria for donating the lunch, and to anyone else who donated time and effort for the occasion. The proceeds from this dance will be used to aid Morris Pete, his two daughters and Florine Dennis to purchase clothing and essentials, and to gain medical aid in extent of medical coverage. The Firemen are planning future drives to aid this worthy fund, and solicit every- one to be generous. The 1st Cassiar Brownie Pack is to be heartily thanked also, for the raffle which they sponsored, also in aid of the Morris Pete Family Disaster Fund. The McDame Teen Club held a Valentine’s Dance, which they very generously moved from February 14th to 13th, so it wouldn’t conflict with the Firemen’s Benefit Dance. The proceeds from this dance were also given to the Morris Pete Family Disaster Fund. The Fire Depart- ment wishes to say a sincere thank you to the teens for moving their dance up one night and for their generous contribution.
